To make Chicken Pizza Sloppy Joes, start by cooking ground chicken in a skillet until it is fully cooked and no longer pink. Drain any excess grease from the skillet and add in diced onions and bell peppers for added flavor and texture. Cook the vegetables until they are tender and then add in a jar of your favorite pizza sauce
Ingredients
1 tablespoon oil
1 pound ground chicken
1/2 cup onion, diced
1/2 cup red bell pepper, diced
2 cloves garlic, grated/minced
1/2 cup chicken broth (or water)
1 tablespoon cornstarch (optional)
1/4 cup BBQ sauce
1 cup pineapple, diced
1/4 cup pickled hot/banana peppers, sliced
4 buns (optionally toasted) (gluten-free for gluten-free)
Directions
Heat the oil in a large skillet, add the chicken, onions and bell pepper and cook, breaking the chicken apart as it cooks, until cooked through, about 10 minutes.
Add the garlic and cook until fragrant, about a minute.
Add the broth mixed with the cornstarch, and simmer until it thickens, about 2-3 minutes.
Mix in the BBQ sauce, pineapple and hot peppers and cook for a minute.
Divide the BBQ chicken mixture between the buns and enjoy!
